Specialised lots are created to enhance the natural flavours found in coffee cherries. Selectively ripe cherries are harvested immersed in water for removal of floats than sent to pulper. The beans are washed off to retain 20% – 30% of the mucilage andsundried on raised beds. These processes are delicately carried out while controlling multiple variables such as moisture, fermentation, drying speed, mucilage, temperature, and varietals, in order to enhance, transform, and bring forth new flavours in your cup of coffee.
